Vitamin D3 is produced in the skin after exposure to ultraviolet B light from the sun or artificial sources, and occurs naturally in only a small range of foods such as oily fish like sardines and salmon, eggs and some margarines.
Vitamin D molecules, made in the skin or ingested, are transported to the liver and metabolised. Further hydroxylation occurs in the kidney.
